Indulgent pumpkin oat chocolate chip cookies for fall gatherings.
Ingredients:
  • 4 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1.5 cups unsalted butter, softened
  • 2 cups firmly packed brown sugar
  • 1 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 (16 ounce) can solid-pack pumpkin (such as Libby's®)
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and give 2 cookie sheets a gentle grease.
  • Mix together the flour, oats, baking soda, cinnamon, and salt in a bowl.
  • In a large bowl, use an electric mixer to cream butter. Gradually incorporate brown and white sugars until the mixture is light and fluffy. Add egg and vanilla extract, mixing until well combined. Alternate adding flour mixture and pumpkin in 3 parts, mixing well after each addition. Finally, fold in chocolate chips.
  • Place dollops of dough 2 inches apart on the baking sheets and shape them into pumpkin shapes.
  • Bake the cookies in the preheated oven for 20 to 25 minutes until they are slightly firm and lightly browned. Be careful not to overbake. Let them cool briefly on the baking sheet before transferring them to a wire rack to cool completely.
