Deliciously spiced pumpkin oatmeal cookies with plump raisins, made with a blend of sugars for perfect chewiness.
Ingredients:
  • 8 ounces butter, softened
  • 1 cup packed brown sugar
  • 1 egg
  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1 teaspoon ground cinnamon
  • 1 cup raisins
  • 2.5 cups all-purpose flour
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, whip up butter, white sugar, and brown sugar until light and fluffy. Add egg, vanilla extract, and pumpkin, and mix until well combined.
  • Combine oats, baking powder, cinnamon, salt, raisins, and flour in a separate bowl, then fold into the pumpkin mixture.
  • Spoon heaping teaspoons of cookie dough onto parchment-lined baking sheets. Bake for 12 to 15 minutes until edges are slightly browned.
  • Transfer the baked item onto cooling racks and top it with your preferred powdered sugar glaze, or enjoy it plain.
