Chia wraps with pomegranate and Moroccan chicken

Try these exotic Moroccan chicken and pomegranate wraps for a flavorful lunch twist.
Ingredients:
  • 400g Chicken Tenderloins
  • 20.00 gm Moroccan spice
  • 4 chia wraps
  • 82.50 ml hummus
  • 250.00 ml baby spinach
  • 200g canned chickpeas, rinsed and drained
  • 100g roasted red capsicum, cut into strips
  • 40.00 ml pomegranate seeds
  • 80g feta cheese, crumbled
  • 62.50 ml coriander leaves
Instructions:
  • Heat up a lightly oiled barbecue or chargrill pan over medium-high heat.
  • Coat the chicken tenderloins generously with fragrant Moroccan spice. Sear the chicken for 4 to 5 minutes per side, until perfectly cooked.
  • Place the chicken slices on a foil-covered plate to rest before thickly slicing.
  • Lay a chia wrap on a plate, generously spread with hummus. Layer with baby spinach, chickpeas, capsicum, and chicken. Finish by sprinkling with pomegranate seeds, feta, and coriander. Season to taste with salt and pepper.
  • Continue the process with the rest of the wraps, then present them with lemon wedges on the side.
