Ingredients:
  • 1 kg topside of quality beef
  • 1 large clove of garlic
  • ½ a bunch of fresh flat-leaf parsley
  • 1 lemon
  • 1 teaspoon dried chilli flakes
  • 4 tablespoons olive oil
Instructions:
  • Allow the meat to come to room temperature, then tenderize it using a meat hammer or Jaccard-style tenderiser on a board. Cut the meat into large chunks and place them in a large bowl. Season to taste. Add finely chopped garlic, chopped parsley, lemon zest, lemon juice, chopped chilli, and oil. Adjust seasonings as needed to enhance the meat's natural flavors. Transfer to a platter and serve with ciabatta-style bread right away.
