Sparkling Autumn Chianti

Indulge in a refreshing fall Chianti spritzer with notes of fruit, vanilla, and white wine.
Ingredients:
  • 1 Bartlett pear
  • 3 small apples
  • 3 plums, cut into wedges
  • 1/2 cup cane syrup
  • 2 sprigs fresh rosemary (4 inch)
  • 1 vanilla bean, split
  • 1 bottle (750 ml) Chianti
  • 1 bottle (750 ml) sparkling white wine, chilled
Instructions:
  • Slice the pear lengthwise into 1/4-inch slices, cutting from the stem end through the bottom. Slice the apples crosswise into 1/4-inch slices.
  • In a 3-quart glass container, mix pears, apples, plums, syrup, rosemary, and vanilla until fruit is coated. Slowly incorporate Chianti. Cover and refrigerate for a minimum of 8 hours or up to 24 hours. Remove and discard rosemary and vanilla before serving.
  • Just before enjoying, gently incorporate the sparkling white wine and serve over ice.
