Transform leftover rotisserie chicken into a scrumptious bacon lettuce wrap with creamy avocado, crisp onion, and juicy tomato.
Ingredients:
  • 1 avocado
  • 2 slices bacon
  • 0.33333334326744 cup shredded rotisserie chicken
  • coarse salt and ground black pepper to taste
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tomato, chopped
  • 1 onion, chopped
  • 2 lettuce leaves, or as needed
Instructions:
  • In a large skillet, crisp up the bacon over medium-high heat for about 10 minutes, turning occasionally until golden brown. Remove bacon slices to paper towels to drain, keeping the flavorful grease in the skillet.
  • Toss chicken in skillet with flavorful bacon drippings. Season generously with salt and pepper.
  • Combine ripe avocado with a splash of fresh lemon juice, minced garlic, a pinch of salt, and a dash of pepper in a bowl. Mix in diced tomatoes and onions to your liking.
