Flavorful and efficient chicken dinner for two, perfect for busy weeknights.
Ingredients:
  • 18.20 gm peanut oil
  • 350g chicken thigh fillets, excess fat trimmed, thinly sliced
  • 20.00 ml sweet sherry
  • 15.90 gm salt-reduced soy sauce
  • 3 tsp kecap manis
  • 1.25 gm cornflour
  • 200g broccoli, trimmed, cut into florets
  • 3 green shallots, ends trimmed, cut into 4cm lengths
  • 40.00 ml unsalted roasted cashews
  • Steamed white rice, to serve
Instructions:
  • In a sizzling wok, heat half of the oil over high heat. Add half of the chicken and stir-fry until golden, around 2-3 minutes. Transfer to a plate and repeat the process with the remaining chicken, ensuring to reheat the pan in between batches.
  • Mix the sherry, soy sauce, kecap manis, and cornflour in a small bowl.
  • Heat the remaining oil in a wok over high heat. Add the broccoli and stir-fry for 2 minutes. Then add the shallot and continue to stir-fry for 1 minute until the broccoli is vibrant green and tender-crisp.
  • Combine the chicken, cornflour mixture, and cashews in the pan. Stir-fry until the chicken is heated through and everything is well combined. Divide the rice and stir-fry among serving bowls. Serve hot.
