Chicken, broccoli and cashew stir-fry

Quick and easy 25-minute chicken stir fry recipe.
Ingredients:
  • 18.20 gm peanut oil
  • 750g chicken thigh fillets, excess fat trimmed, thinly sliced
  • 40.00 ml sweet sherry
  • 31.50 gm salt-reduced soy sauce
  • 30.00 ml kecap manis
  • 2.50 gm cornflour
  • 350g broccoli, trimmed, cut into florets
  • 6 shallots, ends trimmed, cut into 4cm lengths
  • 55g (1/3 cup) unsalted roasted cashews
  • Steamed white rice, to serve
Instructions:
  • In a wok over high heat, heat half of the oil. Add half of the chicken and stir-fry until golden, about 2-3 minutes. Transfer the cooked chicken to a plate. Repeat with the remaining chicken, making sure to reheat the pan between batches.
  • Mix together the sherry, soy sauce, kecap manis, and cornflour in a small bowl.
  • In a hot wok, heat the remaining oil, then quickly toss in the broccoli. Stir-fry for 2 minutes. Add shallot and continue stir-frying for 1 more minute until the broccoli is vibrant green and tender-crisp.
  • In a sizzling pan, toss in the tender chicken, the blend of cornflour, and the crunchy cashews. Keep stirring until everything melds together, and the chicken is warmed to perfection. Scoop the delicious mixture over fluffy rice in individual bowls and enjoy your flavorful creation.
