Chicken, Broccoli and Rice Casserole

Quick and simple chicken and rice casserole with tender chicken, onions, and broccoli. Easy, delicious, and perfect for busy weeknights.
Ingredients:
  • 1 cup uncooked long-grain white rice
  • 1 lb boneless skinless chicken breasts, cut in 1-inch pieces
  • 2 cups broccoli florets, cut in bite-size pieces
  • 1 cup chopped onions
  • 2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 teaspoons Montreal chicken seasoning
  • 2 cups shredded Cheddar cheese (8 oz)
  • 1/2 cup heavy whipping cream
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley leaves
Instructions:
  • Preheat the oven to 350°F. Grease a 13x9-inch (3-quart) glass baking dish. Spread the rice evenly in the dish, then layer the chicken on top of the rice. Finish by topping the chicken with broccoli and onions.
  • Combine the broth and chicken seasoning in a small bowl. Drizzle the mixture over the rice in the baking dish, then cover it with foil. Bake for 40 minutes.
  • Gently fold in cheese and whipping cream into the chicken mixture in the casserole dish. Cover and bake for an additional 20-25 minutes, or until the rice is tender, chicken is fully cooked, and the dish reaches a minimum internal temperature of 165°F. Give it a good stir and garnish with fresh parsley before serving.
