Chicken and burghul salad with fresh veggies - a satisfying main dish.
Ingredients:
  • 135g (3/4 cup) burghul
  • 600g jap pumpkin, deseeded, peeled, cut into 2cm pieces
  • Salt & freshly ground black pepper
  • 4 (about 200g each) single chicken breast fillets
  • 10.00 gm Cajun seasoning (MasterFoods brand)
  • 300g (2 cups) frozen broad beans
  • 1 x 300g can chickpeas, rinsed, drained
  • 125.00 ml loosely packed coarsely chopped fresh coriander
  • 2 tsp cumin seeds
  • 42.00 gm fresh lemon juice
Instructions:
  • In a medium bowl, soak the burghul in cold water for 1 hour.
  • Preheat the oven to 200°C. Arrange pumpkin on a baking tray, drizzle with 1 teaspoon of oil, and season with salt and pepper. Roast in the oven for 30 minutes until tender. Allow to cool for 10 minutes before serving.
  • Sprinkle chicken generously with flavorful Cajun seasoning. Heat the remaining teaspoon of oil in a non-stick pan, then cook the chicken until beautifully golden and fully cooked, about 5 minutes per side. Transfer to a plate and tent with foil to keep it warm.
  • Boil broad beans in salted water until tender, about 5 minutes. Shock in cold water, then peel and transfer to a large bowl.
  • Drain the burghul using a fine sieve, then squeeze out any excess liquid with your hands. Combine the pumpkin, burghul, chickpeas, coriander, and broad beans in a bowl.
  • 1. Start by heating a frying pan on medium heat. Add cumin seeds and cook while stirring for about 1 minute until they become fragrant and start to pop. Take the pan off the heat. 2. Mix the cooked cumin seeds with lemon juice and the remaining oil in a bowl. Pour this mixture into the burghul mixture and toss everything together. 3. Taste the dish and adjust the seasoning with salt and pepper to your preference.
  • Slice the chicken thinly against the grain, then arrange the salad on serving plates. Top with the sliced chicken and serve promptly.
