Chicken, chilli and rocket penne

Spicy chicken penne with peppery rocket - simple and delicious!
Ingredients:
  • 450g fusilli or penne rigate
  • 36.40 gm extra virgin olive oil
  • 3 x 170g chicken breast fillets, cut into 3cm pieces
  • 2 garlic cloves, finely chopped
  • Pinch of dried chilli flakes
  • Zest and juice of 1 lemon
  • 500.00 ml wild rocket leaves
  • 82.50 ml fresh basil leaves, roughly torn
  • 20.00 ml grated parmesan, to serve
Instructions:
  • Prepare pasta in a large pot of boiling salted water following the instructions on the packet.
  • Heat up 1 tablespoon of oil in a large frypan over medium-high heat. Cook the chicken, turning occasionally, for about 5 minutes until it turns lightly golden. Next, add the garlic, chili, and lemon zest, and continue to cook for another 3-4 minutes, stirring occasionally, until the chicken is fully cooked.
  • After cooking the pasta, save 1/3 cup (80ml) of pasta water. Combine the drained pasta and reserved water in a pan with the remaining oil, lemon juice, rocket, and basil. Season with salt and pepper, then sauté over medium heat for 1-2 minutes until the rocket wilts. Serve with a sprinkle of parmesan on top.
