Chicken, Edamame and Rice Salad

Delicious and quick edamame chicken salad with radicchio and rice. Ready in just 20 minutes!
Ingredients:
  • 1 package (8.8 oz) microwavable long-grain white rice
  • 1 1/4 cups Cascadian Farm® frozen organic shelled edamame (from 10-oz bag)
  • 1 cup chopped cooked chicken breast
  • 2 tablespoons finely chopped fresh mint leaves
  • 1 tablespoon grated gingerroot
  • 2 tablespoons rice vinegar
  • 1 tablespoon canola oil
  • 1/4 teaspoon salt
  • 4 leaves radicchio
Instructions:
  • Prepare the rice in the microwave following the instructions on the package.
  • Place edamame and 3 tablespoons of water in a small microwavable bowl. Cover with microwavable plastic wrap and microwave on High for 3 minutes. Allow to stand for 2 minutes, then drain.
  • Combine rice, edamame, chicken, fresh mint, gingerroot, vinegar, oil, and salt in a large bowl. Serve by spooning approximately 3/4 cup of the salad onto each radicchio leaf.
