Edamame and Radish Salad

Vibrant edamame and crisp radishes create a refreshing summer side dish perfect for grilled fish or chicken.
Ingredients:
  • 2 8-ounce packages frozen, shelled edamame
  • 6 large radishes, cut into matchsticks
  • 2 cloves garlic, minced
  • 3 tablespoons rice vinegar
  • 1 tablespoon Everything But the Bagel seasoning
  • 1 teaspoon sugar
  • Salt to taste
Instructions:
  • In a bowl, immerse the frozen edamame in boiling water to cover and let sit for 10 minutes. Drain excess water, then mix in radishes and garlic.
  • Combine vinegar, oil, everything seasoning, and sugar, tossing to coat the ingredients. Add a sprinkle of salt if desired. Refrigerate for at least 1 hour, but preferably overnight for enhanced flavor development.
