Try this unique edamame and cashew hummus with garlic scapes for a flavorful twist on a classic dip.
Ingredients:
  • 1 (16 ounce) package frozen shelled edamame (green soybeans)
  • 5 tablespoons cashews, or more to taste
  • 3 teaspoons salt, or as needed
  • 1 cup green garlic (garlic scapes), cut into pieces
  • 1 teaspoon coriander
  • 1 teaspoon black pepper
  • 1 small lemon, finely zested and juiced
  • 0.75 cup extra-virgin olive oil, or more as needed
Instructions:
  • Bring a pot of water to a boil. Cook edamame until tender, about 4 to 5 minutes. Drain, then chill in the refrigerator for 10 minutes.
  • In the bowl of a food processor, blend cashews and 1/8 teaspoon of salt until it reaches a firm, dough-like consistency, scraping the sides as needed. Add cooked edamame, garlic scapes, coriander, pepper, lemon juice, lemon zest, and 2 teaspoons of salt. Pulse to your desired consistency. Gradually pour in olive oil with the processor running until the hummus becomes smooth. Adjust the seasoning with more olive oil, salt, and pepper to your liking.
