Edamame hummus recipe

Versatile and creamy dip perfect for snacking or entertaining.
Ingredients:
  • 500.00 ml frozen edamame beans
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 75.00 gm tahini
  • 62.50 ml roughly chopped fresh coriander leaves, plus extra chopped coriander to serve
  • 86.63 gm lemon juice
  • 18.20 gm extra virgin olive oil, plus extra to serve
  • 1 garlic clove, quartered
  • Toasted sesame seeds, to serve
  • Toasted sunflower kernels, to serve
  • SunRice Brown Rice Chips Sea Salt
Instructions:
  • Prepare the edamame according to the package instructions, then allow it to cool for 5 minutes.
  • In a small frying pan over medium-high heat, toast cumin and ground coriander until fragrant, about 1 minute.
  • Set aside 1 tablespoon of edamame. Combine the rest of the edamame, tahini, fresh coriander, lemon juice, 1 tablespoon water, oil, garlic, and spices in a food processor. Blend until smooth and well mixed. Season with salt and pepper to taste.
  • Transfer the dip to a serving bowl. Top with a generous drizzle of extra oil, a sprinkle of additional coriander, the rest of the edamame, sesame seeds, sunflower kernels, and SunRice Brown Rice Chips.
