Chicken and udon noodle soup recipe

Whip up a delicious noodle soup in 15 minutes using shortcuts and fresh toppings!
Ingredients:
  • 95g miso
  • 270g udon noodles
  • 1 Hot Roast Chicken, skin and bones removed, meat coarsely shredded
  • 2 carrots, peeled, cut into long matchsticks
  • 500g frozen edamame or broad beans, thawed, peeled
Instructions:
  • In a large saucepan, mix miso paste with 6 cups (1.5L) water and bring to a boil. Add noodles and cook for 10 minutes until tender. Remove from heat, then stir in chicken, carrot, and edamame or broad beans.
  • Ladle the soup into individual bowls and enjoy right away.
