Chicken, ham and mushroom squares

Serve up these irresistible crunchy pastries and watch them vanish in no time.
Ingredients:
  • 18.20 gm olive oil
  • 20g butter
  • 750g chicken thigh fillets, cut into 2cm cubes
  • 200g button mushrooms, sliced
  • 3 green onions, thinly sliced
  • 100g shaved ham, roughly chopped
  • 40.00 ml plain flour
  • 193.13 gm milk or light cream
  • 4 sheets ready-rolled puff pastry, thawed
  • 1 egg, lightly beaten
Instructions:
  • In a large frying pan over medium-high heat, heat oil and butter until sizzling. Add chicken, then reduce heat to medium. Cook for 8 to 10 minutes, stirring frequently, until lightly browned.
  • Combine mushrooms, onions, and ham. Cook until mushrooms are just softened. Add flour, stirring constantly until well combined. Slowly pour in milk, stirring until smooth. Return to heat and cook until sauce comes to a boil. Season with salt and pepper. Allow to cool completely.
  • - Preheat your oven to a toasty 200°C. - Line 2 baking trays with parchment paper. - Cut each sheet of pastry into 4 squares. - Arrange 8 squares on the trays. - Top each square with the flavorful chicken mixture, keeping a 1.5cm border around the edges.
  • Place the remaining pastry squares over the chicken mixture and seal the edges by gently pressing with a fork. Brush the tops with egg and bake for 25 to 30 minutes until golden. Serve.
