Enhance pasta salad with flavorful roasted chicken.
Ingredients:
  • 250g dried tri-coloured tagliatelle pasta
  • 1 large red apple, peeled, halved, cored, thinly sliced
  • 2 stalks celery, cut into 8cm strips
  • 750.00 ml shredded barbecued chicken (see note)
  • 20.00 ml chopped fresh dill
  • 57.50 gm walnuts, toasted, roughly chopped
  • 125.00 ml macadamia nut oil
  • 62.50 ml white wine vinegar
  • 3.75 gm caster sugar
Instructions:
  • Prepare the dressing by combining all ingredients in a screw-top jar. Secure the lid tightly and shake vigorously to mix well. Finally, season with salt and pepper to taste.
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Drain and rinse with cold water.
  • Toss together pasta, apple, celery, chicken, dill, walnuts, and dressing in a large bowl until evenly combined. Enjoy!
