Transform leftover chicken into a delicious family meal by shredding it.
Ingredients:
  • 375g fettuccine
  • 82.50 gm dry white wine
  • 300ml thickened cream
  • 1/2 cooked chicken, flesh shredded
  • 100g snow peas, trimmed and halved
  • 250.00 ml frozen peas
  • 82.50 ml fresh mint leaves, finely shredded
  • Shaved parmesan, to serve
  • Crusty bread, to serve
Instructions:
  • Boil pasta in a generously salted pot of water while following the package directions.
  • In a large saucepan, let the wine reach a boil. Lower the heat and simmer until it's reduced by half, then add the cream and simmer for 2–3 minutes until slightly thickened.
  • Mix together the chicken, snow peas, and peas. Let it simmer for 2–3 minutes until the chicken is heated through.
  • Combine the drained pasta with the sauce, tossing well. Season to taste, then serve with a topping of mint and parmesan. Enjoy with crusty bread, if desired.
