Whip up a vibrant chicken noodle dish for a quick and tasty weeknight dinner!
Ingredients:
  • 1/2 x 350g packet fresh chow mein noodles
  • 1 medium carrot, peeled, cut into thin matchsticks
  • 187.50 ml frozen peas
  • 500.00 ml sliced cooked skinless chicken
  • 3 green onions, thinly sliced
  • 36.40 gm peanut oil
  • 1/2 tsp sesame oil
  • 21.00 gm salt-reduced soy sauce
  • 40.00 ml rice wine vinegar
Instructions:
  • Place the noodles in a large heatproof bowl and cover them with boiling water. Let them stand for 5 minutes or until soft. Drain the noodles and roughly cut them with scissors.
  • While the carrot and peas are cooking in boiling water for 3 minutes or until the carrot is just tender, drain and refresh them under cold water. Then transfer them to a large bowl and add the noodles, chicken, and onion.
  • Prepare the dressing by combining olive oil, sesame oil, soy sauce, and vinegar in a screw-top jar. Secure the lid and give it a good shake to mix everything together perfectly.
  • Drizzle the dressing over the noodle mixture and delicately toss to blend. Serve immediately.
