Quick and easy chicken and vegetable soup using homemade chicken stock.
Ingredients:
  • 20g butter
  • 1 brown onion, chopped
  • 3 large carrots, peeled, finely diced
  • 3 celery stalks, finely diced
  • 1 quantity chicken stock with chopped chicken (see related recipe in Notes)
  • 60g dried vermicelli egg pasta
  • Finely chopped fresh chives, to serve
Instructions:
  • In a large saucepan over medium-high heat, melt the butter. Add the onion, carrot, and celery and cook for 10 minutes, stirring occasionally, until the onion has softened. Pour in 2 liters of stock and 2 cups of cold water, cover the pan, and bring to a boil.
  • Lower the heat to medium, then combine the pasta and 4 cups of chopped chicken. Simmer and stir occasionally for 10 minutes until the pasta is tender. Season with salt and pepper, and serve with a sprinkle of chives.
