Healthy chicken noodle and vegetable soup recipe

Wholesome veggie soup with chicken and wholemeal pasta for a hearty and healthy meal.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 large carrots, peeled, thinly sliced
  • 2 large celery sticks, thinly sliced
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 500g chicken thigh fillets, trimmed, thinly sliced
  • 750ml (3 cups) Salt Reduced Stock Chicken Style
  • 80g dried wholemeal spaghetti pasta, broken in half
  • 150g broccoli, cut into small florets, large stem peeled, thinly sliced
  • 145g (1 cup) frozen corn kernels
  • zucchini, halved lengthways, thinly sliced crossways
  • Chopped fresh continental parsley leaves to serve
  • Grated lemon rind to serve
Instructions:
  • In a large saucepan over medium heat, sauté carrot, celery, and onion in oil until softened, about 6-7 minutes. Stir in garlic and ginger and cook for another minute until fragrant. Add chicken and cook until browned, about 3-4 minutes, stirring occasionally.
  • Pour in the stock and 500ml (2 cups) of water and bring it to a boil. Add the spaghetti and simmer until al dente. Then, add the broccoli, corn, and zucchini and cook until tender, about 5 minutes. Enjoy!
  • Ladle soup into bowls and garnish with fresh parsley, lemon rind, and a sprinkle of freshly ground pepper.
