Delicious chicken and apple stuffing casserole with juicy chicken cutlets, sweet apples, crunchy pecans, flavorful herb-seasoned stuffing mix, and plump dried cherries.
Ingredients:
  • 6 chicken cutlets
  • 0.25 cup half-and-half
  • 0.5 teaspoon dried sage, crumbled
  • 0.5 cup unsalted butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1.5 cups chicken broth
  • 4 cups herb-seasoned stuffing mix
  • 2 cups chopped, unpeeled apples
  • 0.5 cup dried cherries
  • 0.5 cup chopped pecans, divided
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried rosemary
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine the half-and-half, egg, and sage in a bowl and whisk until well mixed.
  • In a 12-inch nonstick, oven-proof skillet, melt butter over medium heat. Sauté onion, celery, salt, and pepper until onion softens, about 4 minutes. Pour in chicken broth, stir in stuffing mix, and add apples, cherries, and 1/4 cup pecans. Remove from heat and mix in half-and-half. Evenly spread the contents in the skillet.
  • Season chicken cutlets generously with fragrant paprika, aromatic rosemary, and a perfect pinch of salt and pepper. Nestle them onto the stuffing mixture, gently pressing until the chicken is level with the other delicious ingredients. Finish with a sprinkle of the remaining 1/4 cup of chopped pecans and a light misting of cooking spray over the chicken.
  • Bake the skillet in the preheated oven until the chicken juices run clear, about 30 minutes or until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C). Serve warm.
