Hearty chicken and brown rice soup with black beans and veggies for a cozy, comforting dish.
Ingredients:
  • 5 cups chicken broth
  • 2 skinless, boneless chicken breast halves
  • 1 cup diced celery
  • 1 cup diced onion
  • 0.25 cup diced carrots
  • 0.25 cup corn
  • 0.25 cup drained and rinsed black beans
  • 1 teaspoon dried sage
  • 1 teaspoon ground black pepper
  • 1 bay leaf
  • 0.75 cup brown rice
Instructions:
  • In a large pot, bring chicken broth to a rolling boil. Add chicken breasts and simmer for 20 minutes until fully cooked. Use a slotted spoon to take out the chicken, then shred it with a fork.
  • Combine shredded chicken with flavorful broth, along with a medley of celery, onion, carrots, corn, black beans, sage, pepper, salt, and a bay leaf. Cook until veggies are slightly softened and flavors meld, roughly 20 minutes. Introduce brown rice and simmer until tender for about 1 hour to develop rich flavors.
