Wholesome weeknight dinner with peas, low-fat cream cheese, and natural cream of chicken soup. Enjoy over hot brown rice or whole wheat noodles.
Ingredients:
  • 1 tablespoon chopped carrot
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped onion
  • 1 clove garlic
  • 0.25 teaspoon lemon zest
  • 0.25 teaspoon ground black pepper
  • 4 skinless, boneless chicken breast halves - cubed
  • 4 ounces Neufchatel cheese
  • 8 ounces natural cream of chicken soup
Instructions:
  • In a small blender or food processor, blend together the carrot, parsley, onion, garlic, lemon zest, salt, and ground pepper until finely chopped. Transfer the mixture to a slow cooker, then add the chicken and butter. Cook on Low for 5 to 6 hours.
  • Combine the creamy Neufchatel cheese, savory chicken soup, and vibrant peas in the pot. Simmer on High heat until everything is perfectly heated through, approximately 30 minutes.
