Chicken and celery casserole

Cozy up with a comforting chicken casserole perfect for chilly nights.
Ingredients:
  • 125.00 ml plain flour
  • 1kg chicken thigh fillets, chopped
  • 60g butter, chopped
  • 1 large brown onion, diced
  • 4 rashers bacon, rind removed, diced
  • 375.00 gm water
  • 410g can cream of celery soup
  • 2 carrots, peeled, diced
  • 3 celery sticks, diced
  • 125.00 ml grated cheese
Instructions:
  • Preheat your oven to 180C. In a plastic bag, combine flour, salt, and pepper by giving it a good shake. Add chicken to the bag and coat it evenly. Arrange the chicken in a single layer in an 8-cup ovenproof casserole dish.
  • Heat butter in a pan over medium-high heat until melted. Sauté onion and bacon for 5 minutes until soft. Transfer to chicken. Sprinkle remaining flour from the bag into the pan and cook for 1 minute, stirring constantly.
  • In a saucepan, mix water and soup together. Bring to a gentle boil while stirring. Pour the mixture over the chicken in a baking dish. Add carrots and celery. Gently mix everything together. Cover the dish and bake for 1 hour, or until the chicken is fully cooked.
  • Uncover the dish and generously sprinkle cheese on top. Bake for an additional 10 minutes until the cheese is gooey and melted. Serve hot and enjoy the cheesy goodness!
