Try loaded baked potatoes with chicken, cheese, and creamy avocado or get creative with your own toppings. Delicious lunch option!
Ingredients:
  • 4 (about 300g each) sebago potatoes, scrubbed, dried
  • 13.80 gm olive oil
  • Salt
  • 200g shredded roast chicken
  • 80g cheddar cheese
  • 1 avocado, halved, stone removed, peeled
  • 5.30 gm fresh lemon juice
  • 90g sour cream
  • 1 tomato, finely chopped
Instructions:
  • Preheat the oven to 200°C. Line a large baking tray with non-stick baking paper. Coat the potatoes evenly with oil and a sprinkle of salt. Bake them for 1 hour until tender. Let them cool for 5 minutes before serving.
  • Make a large cross-shaped cut in the center of each potato without slicing all the way through.
  • Stuff each potato with savory chicken and generously top with gooey melted cheese before baking for 5-10 minutes.
  • Combine mashed avocado and lemon juice, then layer over the potatoes along with sour cream and tomato. Serve.
