Healthy, low-carb chicken and veggie meal for the family.
Ingredients:
  • 500g desiree potatoes, cut into 3cm pieces
  • Olive oil cooking spray
  • 4 single chicken breast fillets
  • 30g baby spinach leaves
  • 70g fresh shiitake mushrooms, thinly sliced (see note)
  • 4 slices Jarlsberg light Swiss cheese
  • Steamed green beans, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200C and line a large roasting pan with baking paper. Arrange the potatoes in a single layer on the pan, then spray with oil and season with salt and pepper. Toss to evenly coat. Roast for 30 minutes until golden brown.
  • Make a lengthwise cut in each chicken breast without cutting all the way through. Stuff with spinach, mushrooms, and cheese, then secure closed with a toothpick.
  • Place the chicken in the roasting pan alongside the potatoes. Roast for an additional 15 minutes, or until the chicken is fully cooked.
  • Serve a delicious dish of seasoned chicken and golden potatoes alongside a side of tender green beans, garnished with zesty lemon wedges.
