Delicious Lebanese baked chicken and potato dish passed down from my mom. Simple yet incredibly tasty.
Ingredients:
  • 8 cut up chicken pieces
  • 8 medium potatoes, peeled and quartered
  • ground white pepper to taste
  • 4 cloves garlic, crushed
  • 0.5 cup extra virgin olive oil
  • 1 cup fresh lemon juice
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • In a large baking dish, luxuriously season the chicken and potatoes with a generous amount of salt and white pepper.
  • Combine the minced garlic, fragrant olive oil, and tangy lemon juice in a bowl. Drizzle the mixture over the succulent chicken and tender potatoes, then cover the dish with foil.
  • After baking for 30 minutes in a preheated oven, uncover, raise heat to 475 degrees F (245 degrees C), and continue cooking until chicken and potatoes are golden, approximately 30 minutes more.
