Delicious Lebanese one-pot chicken and rice dish, a regional favorite.
Ingredients:
  • 3 tablespoons olive oil
  • 4 skinless, boneless chicken breasts
  • 4 ounces diced onion
  • 12 ounces ground beef
  • 1 tablespoon minced garlic
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 0.75 teaspoon salt
  • 0.25 teaspoon ground cayenne pepper
  • 1.5 cups long grain rice
  • 3 cups chicken broth
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • In a hot, heavy, oven-safe skillet, sear chicken breasts in olive oil until golden brown on both sides, around 5 minutes each side. Once done, set aside the chicken. Add onion and ground beef to the skillet, sauté until onions begin to caramelize, for about 5 minutes. Stir in garlic and cook for 1 to 2 minutes. Sprinkle in cinnamon, allspice, salt, and cayenne pepper. Stir and cook for another 2 minutes.
  • Coat rice thoroughly in oil and spices in the skillet. Nestle chicken breasts into the rice and pour in broth before covering the skillet tightly with a lid or foil.
  • Bake in the preheated oven for 20 minutes, or until the rice has absorbed all liquid. Sprinkle with parsley before serving.
