Lebanese rice pilaf with buttery almonds and creamy tahini, a decadent side for chicken and hummus.
Ingredients:
  • 3 cups parboiled long-grain white rice
  • 0.5 cup butter, divided
  • 4 tablespoons olive oil, divided
  • 0.5 cup orzo pasta
  • 4 cups water
  • 1 tablespoon salt
  • 1 tablespoon slivered almonds, or to taste
  • 1 tablespoon tahini
Instructions:
  • In a large bowl, immerse rice in water and soak for 10 minutes. Drain and rinse until water is clear.
  • In a skillet over medium heat, melt 1/4 cup of butter with 2 tablespoons of olive oil. Stir in the orzo and cook until lightly browned, about 5 minutes. Add the drained rice and increase the heat to medium-high. Cook and stir until the rice is coated and starts to turn translucent, about 5 minutes.
  • Pour 4 cups of water over the rice mixture, add salt, and stir. Bring to a boil, cover the skillet, reduce heat to low, and simmer for about 20 minutes until the rice is fluffy yet firm.
  • In another skillet over medium heat, toast almonds in 2 tablespoons of olive oil until fragrant, about 5 minutes. Mix in 1/4 cup butter and tahini until almonds are well coated.
  • Incorporate the almond mixture into the rice mixture.
