Cheesy chicken-stuffed pasta shells, baked in savory tomato sauce.
Ingredients:
  • 1 (12 ounce) package jumbo pasta shells
  • 4 skinless, boneless chicken breast halves - cubed
  • 1 onion, chopped
  • 1 egg
  • 1 cup dry bread crumbs
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • salt and pepper to taste
  • 8 ounces shredded mozzarella cheese
  • 8 ounces shredded Cheddar cheese
  • 1 (29 ounce) can tomato sauce
Instructions:
  • 1. Preheat your oven to 350 degrees F (175 degrees C). 2. Boil a large pot of lightly salted water. 3. Cook pasta for 8 to 10 minutes until al dente. 4. Drain the pasta. 5. Separate shells and lay them out on waxed paper or foil without touching.
  • In a large skillet over medium heat, mix together the chicken, onion, egg, and bread crumbs until the chicken is no longer pink. Season with oregano, basil, salt, and pepper. Add three-quarters of the shredded mozzarella and cheddar, stirring until the cheeses melt.
  • Spoon generous amounts of the flavorful chicken mixture into the shells, arranging them neatly in a 9 x 13 baking dish. Pour the savory tomato sauce over the shells and sprinkle with the remaining cheese. Cover the dish with foil and bake for 45 minutes, or until golden brown and bubbling.
