Delight the whole family with these simple and delicious chicken and chickpea fritters, a kid-friendly favorite!
Ingredients:
  • 300g can chickpeas, drained, rinsed
  • 250.00 ml shredded cooked chicken
  • 62.50 ml chopped fresh coriander leaves
  • 1 tsp finely grated lemon rind
  • 99.00 gm self-raising flour
  • 128.75 gm milk
Instructions:
  • Prepare the basic batter by sifting flour into a bowl and creating a well in the center. In a separate jug, whisk together milk and eggs, then pour the mixture into the flour. Whisk everything together until smooth.
  • In a bowl, combine chickpeas, chicken, coriander, and lemon rind. Mash chickpeas until they are nearly smooth, then stir to incorporate all ingredients evenly.
  • In a frying pan over medium heat, warm 1 tablespoon of oil. Scoop 1/4 cup of the mixture into the pan to make each fritter. Cook for 3 minutes on each side until they are golden and fully cooked. Repeat the process to make a total of 12 fritters. Serve and enjoy!
