Chicken and corn quiche

Elevate your chicken and corn quiche with savory parmesan shortcrust pastry.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 green onions, chopped
  • 1 garlic clove, crushed
  • 250.00 ml chopped cooked chicken
  • 40.00 ml chopped fresh flat-leaf parsley
  • 4 eggs
  • 63.13 gm pure cream
  • 125.00 ml grated parmesan
  • 1 large corn cob, husk and silk removed
  • 437.50 ml plain flour
  • Pinch of salt
  • 150g chilled butter, chopped
  • 82.50 ml finely grated parmesan
  • 20.00 gm iced water
Instructions:
  • For the Parmesan shortcrust pastry, combine flour, salt, butter, and Parmesan in a food processor and pulse until fine crumbs form. Add egg yolk and water, then pulse until the mixture just comes together. Shape the dough into a disc, cover with plastic wrap, and refrigerate until firm, about 30 minutes.
  • Preheat your oven to 200C/180C fan-forced and generously grease a 2.5cm-deep, 11.5cm x 34cm loose-based fluted tart pan.
  • Gently roll out the pastry to a 5mm thickness between two sheets of baking paper. Line the base and sides of a pan with the pastry, trim the edges, and place on a baking tray. Cover the pastry with another sheet of baking paper and fill with baking weights or uncooked rice. Blind-bake for 10 minutes, then remove the weights and paper. Bake for an additional 5 minutes, then let it cool completely before reducing the oven temperature to 180°C/160°C fan-forced.
  • In a large frying pan over medium-high heat, sauté onion and garlic until fragrant, about 2 minutes. Remove from heat and let cool. Stir in chicken and parsley until well mixed.
  • Fill the pastry case with the chicken mixture. Combine eggs, cream, and Parmesan, season with salt and pepper, then pour over the chicken mixture.
  • With a sharp knife, slice corn kernels from cob into large pieces. Layer them on top of the egg mixture. Bake for 30-35 minutes or until the filling is just set. Let it rest for 15 minutes, then gently take it out of the pan. Enjoy warm or cold.
