Whip up a flavorful Italian dish in just 35 minutes with grilled chicken, penne pasta, tomatoes, and two cheeses.
Ingredients:
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lb boneless skinless chicken breasts
  • 2 1/4 cups uncooked penne pasta (8 oz)
  • 1 pint (2 cups) grape tomatoes, cut in half
  • 8 oz fresh mozzarella cheese, cut into 1/2-inch cubes
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • 1/2 cup chopped fresh Italian (flat-leaf) parsley
Instructions:
  • Preheat gas or charcoal grill. Combine 1 tablespoon of oil, Italian seasoning, salt, and pepper in a small bowl. Coat both sides of the chicken with the mixture.
  • Grill the chicken over medium heat until it reaches an internal temperature of at least 165°F, about 12 to 15 minutes in total, turning it once. Let it rest on a cutting board, covered, to keep warm.
  • While the pasta is cooking according to the package instructions, heat a large amount of water and cook it until tender. In a large bowl, mix the cooked pasta with the remaining 2 tablespoons of oil. Slice the chicken thinly. Combine the sliced chicken and the rest of the ingredients with the pasta and mix well.
