Whip up this delicious and simple recipe loved by all!
Ingredients:
  • 6 chicken thigh fillets, chopped
  • 1 large brown onion, finely chopped
  • 231.00 gm korma curry paste
  • 125.00 gm water
  • 400ml can coconut milk
  • 2 x 400g cans brown lentils, drained, rinsed
  • 62.50 ml coriander leaves, chopped
Instructions:
  • To achieve a beautiful caramelization, heat oil in a hot frying pan. Cook chicken in batches for about 3 minutes or until nicely browned, then set it aside.
  • Turn down the heat to medium and toss in the onion. Sauté, stirring constantly, for 3 minutes. Mix in the curry paste and continue to stir and cook for 2 minutes. Pour in the water and coconut milk mixture. Add the chicken and lentils to the pan. Stir everything together until well combined.
  • Simmer the dish for 30 minutes until the chicken is fully cooked. Finish with a sprinkle of fresh coriander before serving.
