Stir-fried chicken and colorful peppers with onions, garlic, and balsamic, served over rice for a flavorful meal.
Ingredients:
  • salt and pepper to taste
  • 0.25 cup olive oil, divided
  • 4 skinless, boneless chicken breast halves - cut into strips
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 4 large cloves garlic, finely chopped
  • 1 tablespoon dried basil
  • 0.25 cup balsamic vinegar, divided
Instructions:
  • Prepare all the necessary ingredients.
  • In a large skillet over medium-high heat, warm 2 tablespoons of olive oil. Add the chicken, season with salt and pepper, and cook until golden brown, about 3 to 5 minutes. Transfer the chicken to a bowl and set it aside.
  • In the same skillet, heat the remaining oil, then sauté the bell peppers and onion until tender, about 3 minutes.
  • Sauté garlic until aromatic, then mix in 2 tablespoons of balsamic vinegar and fresh basil.
  • Return the chicken to the skillet, lower the heat, cover, and gently simmer for approximately 20 minutes until the chicken is fully cooked and the juices run clear.
  • Add the rest of the balsamic vinegar right before serving for maximum flavor.
