Try delicious chicken meatloaf with nutritious pine nuts.
Ingredients:
  • 82.50 ml pine nuts, chopped
  • 750g chicken mince
  • 375.00 ml fresh breadcrumbs
  • 187.50 ml basil leaves, finely shredded
  • 62.50 ml flat-leaf parsley leaves, chopped
Instructions:
  • Preheat the oven to 180°C and lightly grease a 7cm deep, 10cm x 20cm loaf pan.
  • In a medium heat frying pan, heat oil. Add onion, garlic, and nuts. Cook for 8 minutes until softened, stirring occasionally. Let cool before using.
  • Mix together the mince, breadcrumbs, herbs, egg, onion mixture, salt, and pepper until well combined. Spread the mixture into a pan evenly and compact it down. Bake for 40 minutes or until golden brown.
  • Let the dish rest in the pan for 10 minutes before serving.
