Sausage and pine nut pizzas

Upgrade your pizza game with a gourmet twist using unique ingredients for a delicious and luxurious experience.
Ingredients:
  • 9.20 gm olive oil
  • 6 thick chicken sausages
  • 2 x 26cm frozen pizza bases
  • 165.00 ml hommus (see tip)
  • 300g roasted red capsicum, cut into thin strips
  • 150g feta cheese, crumbled
  • 62.50 ml pine nuts
Instructions:
  • 1. Preheat the oven to 230°C. In a large, non-stick frying pan over medium heat, warm the oil. Cook the sausages for 15 minutes, turning occasionally, until they are almost cooked. Remove the sausages from the pan and place them on a plate lined with paper towel. Allow them to cool slightly before thinly slicing.
  • On 2 pizza trays, evenly spread 1/3 cup of hummus on each pizza base. Add sausage slices and capsicum strips, then sprinkle feta and pine nuts on top.
  • Bake for 10 minutes, then switch trays in the oven and bake for another 5 minutes until bases are crisp. Top with spinach, return to the oven, and cook for 2 minutes until leaves are wilted. Season with pepper and enjoy!
