Chicken and pistachio coconut broth

Elevate your dining experience with this flavorful Asian-inspired soup recipe!
Ingredients:
  • 250g pistachios, shelled
  • 2 x 400ml cans coconut milk
  • 375ml chicken stock
  • 3 fresh small red chillies, deseeded, thinly sliced
  • 750g chicken breast fillets, cut into 2.5cm pieces
  • 5 makrut lime leaves, shredded
Instructions:
  • Boil 1 cup (250ml) of water with the pistachios. After draining and letting them cool, easily remove the skins by rubbing them and then dry them. Chop the pistachios finely in a food processor.
  • In a saucepan, combine coconut milk, chicken stock, chilli, and ground pistachios over low heat. Cook until well combined. Add chicken and simmer for 10-15 minutes until cooked. Mix in the makrut lime leaves and serve hot.
