Chicken and Potato Soup

Upgrade your potato soup with savory chicken and fresh vegetables for a delicious twist!
Ingredients:
  • 2 tablespoons butter
  • 2.5 pounds skinless, boneless chicken breast halves - diced
  • 1 large onion, diced
  • 6 medium potatoes, diced
  • 1 (15 ounce) can carrots, drained
  • 1 (10 ounce) can peas, drained
  • 1 (11 ounce) can corn, drained
  • 1 cup milk
  • 2 cups water, or as needed
  • hot pepper sauce to taste
  • ground black pepper to taste
Instructions:
  • In a large pot over medium heat, melt the butter and cook the chicken for 10 minutes until it is evenly browned and the juices run clear.
  • Combine the onion and chicken in a pot. Add potatoes, carrots, peas, and corn. Pour in milk and enough water to cover all ingredients. Season with hot sauce, salt, and pepper. Bring to a boil, then simmer on low heat for 30 minutes, stirring occasionally until potatoes are tender.
