Indulge in a decadent creamy chicken potato soup bursting with savory flavors of chicken, potatoes, onions, chives, and spices.
Ingredients:
  • 0.5 cup butter
  • 0.5 cup all-purpose flour
  • 1 onion, chopped
  • 1 bunch chopped fresh chives
  • 2 quarts heavy cream
  • 1 quart milk
  • 2 cups water
  • 3 teaspoons ground cumin
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 4 potatoes, peeled and cubed
  • 1 pound skinless, boneless chicken breast halves - cut into cubes
  • 3 tablespoons chopped fresh parsley
Instructions:
  • In a large pot over medium heat, melt butter until sizzling. Stir in flour until fully incorporated. Add onion and chives, sauté for 5 minutes until fragrant.
  • Add cream, milk, and water to the mixture, then enhance the flavors with cumin, salt, pepper, garlic powder, and thyme.
  • Combine the potatoes and chicken in the pot. Simmer over low heat for 1 hour. Remove from heat, cool slightly, then divide into individual bowls and garnish with parsley.
