Chicken and prosciutto meatloaf for a delicious twist on a classic dish.
Ingredients:
  • 8 thin slices prosciutto
  • 500g chicken mince
  • 1/2 small brown onion, finely chopped
  • 1/2 small red capsicum, finely chopped
  • 165.00 ml fresh breadcrumbs
  • 40.00 ml finely chopped fresh chives
  • 93.23 gm barbecue sauce
  • 41.60 gm tomato sauce
  • Steamed chat potatoes, to serve
  • Green beans, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a 9cm x 19cm loaf pan that is 6cm deep. Line the base and sides with prosciutto slices, overlapping slightly.
  • In a bowl, mix mince, onion, capsicum, egg, breadcrumbs, chives, and 2 tablespoons of barbecue sauce. Season with salt and pepper. Press the meatloaf mixture into a pan. Cover with foil and bake for 25 minutes.
  • Mix tomato sauce, sugar, and the rest of the barbecue sauce in a small bowl. Place the meatloaf on a baking paper-lined tray and brush it with the sauce mixture.
  • Continue baking for an additional 15 to 20 minutes until the sauce caramelizes and the meatloaf is fully cooked. Allow the meatloaf to rest for 5 minutes before slicing. Serve with steamed potatoes and beans.
