Chicken and rice salad with green goddess dressing

Make portable chicken and rice salad jars with green goddess dressing and fresh veggies for a delicious lunch on-the-go.
Ingredients:
  • 250g pkt microwavable rice
  • 120g pea
  • 1 large carrot, peeled, cut into long matchsticks
  • 18.20 gm extra virgin olive oil
  • 500.00 ml shredded Hot Roast Chicken
  • 300g mixed medley tomatoes, halved
  • 250.00 ml alfalfa sprouts
  • 120g fetta, crumbled
  • 60g pkt Baby Spinach
  • 250.00 ml flat-leaf parsley leaves
  • 120g sour cream
  • 40.00 ml chopped tarragon
  • 40.00 ml chopped chives
  • 1 garlic clove, quartered
  • 18.20 gm olive oil
Instructions:
  • Cook the rice as per the instructions on the packet. Once cooked, transfer the rice to a heatproof bowl and let it cool completely.
  • Cook peas in a small saucepan of boiling water for 2 minutes or until heated through. Then, refresh them under cold water and drain well.
  • Combine parsley, sour cream, tarragon, chives, garlic, and oil in a blender. Blend until smooth, season to taste, and transfer to a bowl.
  • Distribute the rice evenly among four 350ml jars. Add carrot and peas on top. Drizzle with oil and green goddess dressing. Finish with chicken, tomato, alfalfa sprouts, feta, and spinach before serving.
