Recreate childhood favorite Chinese honey chicken at home for a quick and flavorful meal. Pair with rice and veggies or an Asian salad. Use gluten-free ingredients for a gluten-free version. Finish with toasted sesame seeds, chili, and green shallots for extra flavor and crunch. Serve immediately for best crispiness.
Ingredients:
  • 600g chicken breast or thigh fillet, cut into 3cm pieces
  • 31.50 gm soy sauce
  • 3 tsp Chinese cooking wine (Shaoxing)
  • Vegetable oil, to deep-fry
  • 20.00 gm gluten-free self-raising flour
  • Sliced green shallots, to serve
  • 150g (1 cup) gluten-free self-raising flour
  • 185ml (3/4 cup) chilled soda water
  • 125ml (1/2 cup) honey
  • 55.60 gm glucose syrup
  • 21.00 gm soy sauce
  • 2 tsp Chinese cooking wine (Shaoxing)
Instructions:
  • Marinate the chicken in a flavorful blend of soy sauce and cooking wine in a large bowl for 10 minutes. Heat oil in a saucepan over medium-high heat until it reaches 170°C on a cook's thermometer.
  • In a medium bowl, combine flour and soda water, whisking until smooth and well mixed for the batter.
  • In a large frying pan, combine all ingredients over low heat, stirring until warmed through and well combined. Set aside after removing from heat.
  • Sprinkle marinated chicken with flour and coat evenly. Prepare a tray lined with paper towel. Dredge one-third of the chicken in the batter, shaking off excess. Gently drop chicken into the hot oil and fry for 3 minutes until golden, stirring occasionally. Transfer cooked chicken to the lined tray using a slotted spoon. Repeat with remaining chicken pieces.
  • Dip the remaining chicken in the batter and fry in two more batches, making sure the oil is hot before adding more chicken.
  • After frying all the chicken once, heat up the oil to 190°C again. Fry the chicken in 2 separate batches for 1 1/2 minutes per batch until the coating is crisp and dark golden brown, and the chicken is fully cooked. Remove and drain on paper towels.
  • Just before serving, gently reheat the sauce until warm and runny. Add the crispy chicken all at once, and delicately coat with a spatula. Place on a serving plate and garnish with green shallots. Enjoy!
