Vibrant greens and juicy strawberries create a colorful and flavorful main-dish salad.
Ingredients:
  • 3 tablespoons apple juice
  • 2 tablespoons strawberry spreadable fruit
  • 2 tablespoons balsamic vinegar
  • 1 lb boneless skinless chicken breasts
  • 8 cups bite-size pieces spinach
  • 1 cup strawberries, stems removed and strawberries cut in half
  • 1/4 cup crumbled Gorgonzola cheese (1 oz)
  • 1/4 cup chopped walnuts
Instructions:
  • Combine all dressing ingredients in a small bowl and blend well before setting aside.
  • Prepare a 10-inch skillet by spraying it with cooking spray and heat it over medium-high heat. Cook the chicken in the skillet for 15 to 20 minutes, turning it once, until the juices run clear and the center reaches 170°F. Transfer the cooked chicken to a cutting board.
  • Pour the dressing into the skillet and gently stir to release any flavorful pan drippings.
  • Slice chicken. Divide spinach among 4 plates. Arrange chicken, strawberries, and cheese on top of the spinach. Drizzle with dressing and sprinkle with walnuts.
