Chicken and sun dried tomato salad

Quick and easy summer chicken salad - simple, tasty, and delicious.
Ingredients:
  • 1 baby cos lettuce, leaves separated
  • 50g sun-dried tomatoes, halved
  • 250g marinated button mushrooms
  • 1 yellow capsicum, deseeded, sliced
  • 1 roast chicken
  • 110g container Caesar dressing
Instructions:
  • Place eggs in a saucepan filled with cold water. Bring to a boil and cook for 5 minutes. Drain, peel, and quarter.
  • Place the lettuce in a large bowl, then add tomatoes, mushrooms, and capsicum. Toss to mix everything together.
  • Remove the chicken from the bones and combine it with the eggs in the salad. Finish by drizzling the dressing over the salad before serving.
