Elevate chicken salad with a modern flair; ideal for snacking or as a refreshing salad option.
Ingredients:
  • 2 cups chopped cooked chicken breast
  • 2/3 cup sun-dried tomatoes packed in oil, drained, chopped
  • 2 tablespoons finely chopped shallot
  • 2 cloves garlic, finely chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh basil leaves
  • Food Should Taste Good™ tomato & basil brown rice crackers, as desired
Instructions:
  • Combine chicken, tomatoes, shallot, and garlic in a medium bowl. In another small bowl, whisk together oil, vinegar, salt, and pepper. Pour the oil mixture into the chicken mixture and stir until combined. Add basil and gently mix in. Chill in the refrigerator until serving.
  • Accompany the vibrant salad with a side of crispy crackers.
