Create a kid-friendly chicken soup that's clever and delightful.
Ingredients:
  • 1/2 large barbecued chicken, skin and bones removed
  • 9.20 gm olive oil
  • 1 medium brown onion, roughly chopped
  • 2 celery stalks, chopped
  • 1 medium carrot, peeled, chopped
  • 2 garlic cloves, crushed
  • 1 litre chicken style liquid stock
  • 125g pasta
  • 80g cabbage
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Transfer the cooked chicken onto a cutting board. Use two forks to shred the chicken until you have 2 cups worth.
  • In a saucepan over medium heat, warm the oil and sauté the onion, celery, carrot, and garlic for 3 minutes until the onion is soft.
  • Combine chicken, flavorful stock, and 2 cups of cold water in a pot and bring to a boil. Stir in pasta and cook for 10 minutes, stirring occasionally, until pasta is tender.
  • Add the cabbage and parsley to the mixture and simmer for 5 minutes, or until the cabbage is soft. Enjoy!
