Indulgent cheesy chicken and asparagus casserole with creamy noodles, Parmesan, and colorful veggies - a delicious twist on classic pasta bake.
Ingredients:
  • 1 (8 ounce) package egg noodles
  • 1.3333333730698 tablespoons olive oil
  • 1 onion, chopped
  • 1 cup chopped, cooked chicken meat
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 cup chicken stock
  • 1.5 cups sour cream
  • 0.5 teaspoon dried oregano
  • 1 pound fresh asparagus, trimmed and cut into 2 inch pieces
  • 8 tablespoons grated Parmesan cheese, divided
Instructions:
  • 1. Collect all the ingredients needed for the recipe. 2. Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 1 1/2-quart casserole dish.
  • 1. In a large pot, bring salted water to a rapid boil. 2. Add egg noodles and cook until almost tender, approximately 5 minutes. 3. Drain the noodles thoroughly.
  • In a heavy skillet over medium heat, sauté onion in olive oil for 4-5 minutes until translucent. Add cooked chicken, red bell pepper, celery, and chicken stock. Bring to a boil, then simmer for 5 minutes. Finish by stirring in sour cream and oregano.
  • In the prepared dish, layer half of the chicken mixture, followed by asparagus. Add a layer of cooked noodles and sprinkle 5 tablespoons of Parmesan cheese on top. Finish with the remaining chicken mixture and sprinkle the remaining 3 tablespoons of Parmesan cheese. Bake until golden brown and bubbly, about 30 minutes in the preheated oven.
